Abstract

Using batch fermentation process, the effects of initial sugar concentration on SCP production by Saccharomyces cerevisiae 2104 were evaluated. Among the initial concentration of 30 g/1, 50 g/l, and 70 g/1, and nitrogen concentrations of 1%, 2%, and 3%, the 50 g/l initial sugar concentration and 3% nitrogen concentration combination gave the highest SCP production. The SCP produced was 19.74 g/l which is 42.09% yield with respect to sugar consumed. This concentration also gave the highest growth rate, shortest doubling time and highest overall productivity which are 4.166 x 10-2 hr-1, 16.64 hours and 0.38546 g/l (hr), respectively.
