Abstract

The efficacy of using Celluclast 1.5 L for the aqueous extraction of coconut oil was tested. The effects of parameters such as temperature, enzyme concentration, pH and reaction time on the volume of extracted cream were determined. The optimum reaction time was 4 hours which indicates that as reaction time is increased, the volume of extracted cream also increased. Among the temperature values of 40, 50 and 60°C, enzyme concentration of 1 2 and 3% (v/w) and pH 4.5, 5 and 6 that were tested, the combination of 60°C, 3% (v/w) enzyme concentration and pH 5 gave the highest volume of extracted cream. The volume was 105.42 ml. This indicates that as temperature is increased, the volume of extracted cream also increased. Likewise, as the amount of enzyme concentration is increased, I the volume of extracted cream increased, too. However, as for the effect of pH, the volume of extracted cream increased pH is increased from 4.5 to 5.0 but then decreased as pH is further increased from 5.0 to 6.0. For the improvement of the study, it is recommended to conduct more runs using all the possible combinations of the set values of the tested parameters. The maturity and variety of the coconuts that would be used should likewise be considered.
