Abstract

The efficacy of using Aspergillus niger for oil extraction from coconut via the wet process was studied. The effects of the various levels of pH, temperature and cell concentration are determined. The production of coconut cream was the determinant for oil extraction. At a constant temperature of 30°C and at all cell concentration levels tested (10, 20 and 30 g/L), the best pH condition was found to be at about pH 5 while the best cell concentration relative to the tested cell concentration levels, was at 30 g/L. Of the temperatures tested, 30°C gave the highest cream yield at pH 5 and 30 g/L cell concentration.

An equation relating the coconut cream yield to the PH, temperature and cell concentration was developed. This equation predicts that among the levels of pH, temperature and cell concentration tested, the highest cream yield occurs at pH 5, 30 g/L and 30°C.

Further tests are required to verify the conditions where the cream yield was the maximum. Interactions testing of the various parameters have to be considered in order arrive at a real and reproducible optimum. It is recommended that wider range of the parameters be tested and the actual amount of the of oil be used instead of the amount of cream.
