Abstract

Storage stability test was done to sweet sorghum syrup to assess its suitability for bioethanol production after storage. The effects of initial Brix concentration (55°, 60° and 65°), material of construction of the storage container (Carbon Steel and High Density Polyethylene) and storage temperature (4 °C, 30 °C and 40 °C) on the pH, Brix and reducing sugar content were investigated in this study. Syrup storage was done for four months. Sampling was done aseptically every two weeks. Results showed that the most favorable condition for the storage of unclarified sweet sorghum syrup is by concentrating the syrup to 65 °Brix and storing it in carbon steel container at 30 °C based on its reducing sugar concentration of 264.32 mg/ml. Comparison on the effect of clarification on the pH and Brix was also done based on the results of a parallel study and it was found out that the clarification only affected the pH and Brix when the samples were stored in HDPE. Since higher Brix is desired for bio-ethanol production, clarification is recommended. Significance of each effect to the response and their interactions, was assessed via F-test.
