Abstract

The one-shell pass and two-tube passes heat exchanger was tested in a continuous process as a juice heater to determine its performance characteristics.

Feed of percent sugar through the tube-side while saturated steam at 10 psig was passed through the shell-side of the heater. Volumetric flow rates of the feed were varied while that of the heating steam was kept constant.

An empirical equation for the actual over-all heat transfer coefficient of the heater was developed. The test showed that as the volumetric flow rate of the juice increases, its corresponding over-all heat transfer coefficient also increases.

The actual over-all heat transfer coefficient of the transfer juice heater unit was found to be 34.5643 Btu/hr ft2 °F giving a transfer unit of 2.59 and an effectiveness of 0.8389.
